Food Safety: Location and Facilities
Before establishing a food safety management system an organisation should ensure the location is satisfactory and the facilities are adequately designed. Food establishments should be located away from environmentally polluted areas and industrial activities which pose a serious threat of contaminating food. Areas subject to flooding should be avoided unless safeguards are provided. Areas prone to infestations of pests and areas where wastes cannot be removed effectively should also be avoided. Facilities should permit appropriate maintenance, cleaning, minimise contamination from surfaces and materials, and provide effective protection against pest access and harbourage. The internal design and layout of food establishments should permit hygienic practices. Food safety management system procedures should ensure protection against cross-contamination during operations.
