Nobody should make anyone do anything. it has to come naturally from that person. My boyfriend is Indian and I am a Jewish South African. We are very different, but like each others differences. The only problems we have come from his parents side, they don't approve of our relationship. Otherwise if you love that person, the changes you will make will come naturally.... and they will feel right. it's a much harder route to take, multicultural relationships, but far more worth it, in my opinion.
References :
Firstly, India is a land of many languages and cultures.

You mentioned your husband was Punjabi. Is he Sikh? As in one who wears a turban? I'm not too sure about the eating habits of Sikhs, but I found the following page to be informative. Do check it out if he is indeed a Sikh.

Its only natural if he objects to food that is not permitted by his religion. He might not be able to appreciate culinary differences in other cultures if he is not broadminded enough.

I know an Indian friend of mine who was seeing a Brazilian girl. Their relationship didn't work out, owing to differences in their respective cultures. But that doesn't mean yours can't survive either. You both just need to give each other a chance to make it work.
References :
http://www.sikhworld.co.uk/page40.html
